- 1 seedless cucumber
- 1 cup plain full-fat Greek yogurt
- ¼ cup sour cream
- 2 cloves garlic, minced or grated
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice or distilled white vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon cracked black pepper
- 1 tablespoon finely chopped fresh dill or mint (or both)
- Grate the cucumber and drain through a fine mesh sieve for 1 hour.
- In a large bowl, combine all ingredients, refrigerate until ready to use. Enjoy!
