Sheet Pan Chicken Sausage and Peppers

  • 1 (12-ounce) package precooked Italian chicken or turkey sausage
  • 2-3 medium bell peppers in assorted colors, sliced into ¼ -inch strips
  • 1 small red or yellow onion, sliced into ¼ -inch strips
  • 3 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon kosher salt
  • ½ teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • pinch of red pepper flakes
  • fresh oregano and parsley, optional garnish


  • Preheat the oven to 400º F. Line a large, rimmed baking sheet with parchment paper.
  • Arrange the sausage, bell peppers, and onions in the prepared pan. Drizzle with olive oil and red wine vinegar, then sprinkle with salt, basil, garlic powder, oregano, black pepper, and red pepper flakes. Toss to combine, then arrange in a single layer.
  • Bake for 25-35 minutes, until the peppers are as tender, tossing once halfway through. Remove from the oven and garnish with fresh herbs, if desired. Serve immediately. Enjoy!
