Salmon and Veggie Skewers

  • 12 ounces salmon fillet
  • 1 yellow squash
  • 1 zucchini
  • ¼ large red onion
  • ½ cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ lemon, for serving


  • Cut the salmon, squash, zucchini and red onion into 1½ inch chunks.
  • In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add salmon and veggie pieces and marinade with the oil mixture for 15 minutes.
  • Thread your skewers alternately with the salmon and veggies. Roast in the oven at 450ºF. or grill on high heat for 8-10 minutes, or until the fish is cooked through and the veggies are softened a bit.
  • Serve with a squeeze of lemon. Enjoy!
