Red Velvet Kiss Cookies

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • teaspoon baking powder
  • teaspoon baking soda
  • pinch of kosher salt
  • 7 tablespoons butter, room temperature
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla
  • ½ tablespoon red food coloring
  • ¾ cup granulated or sanding sugar
  • 18 Hershey's Kiss chocolates, unwrapped

  • Preheat the oven to 350°F. Line 2 baking sheets with a baking mat or parchment paper.
  • In a large bowl, combine the flour, cocoa powder, baking soda, baking powder and salt. Mix everything together and set aside.
  • Using a stand or hand mixer, cream together the butter, and both sugars on medium speed for 3-4 minutes, until light and fluffy. Add the egg, vanilla, and red food coloring, and mix until fully incorporated. Slowly add the dry ingredients into the wet ingredients in 2 batches and mix at a low speed until just combined.
  • Scoop the cookies with a small cookie scoop and roll in granulated or sanding sugar and place on the prepared pans, then refrigerate for 20 minutes (if time permits).
  • Bake for 11-13 minutes. Remove from oven and quickly press a Hershey's Kiss chocolate into the middle of the cookie and allow them to cool on a wire rack. Enjoy!
