No Mayo Tuna Salad

Ingredients
  

  • 4 cans Albacore tuna, packed in water or olive oil
  • ½ cup red onion, minced
  • 3 stalks celery, diced
  • 6 peperoncini peppers, thinly sliced
  • 2 tablespoons capers
  • ½ cup fresh parsley, chopped
  • 2 tablespoons Dijon mustard
  • ½ cup extra virgin olive oil
  • 1/3 cup pepperoncini brine
  • 1 tablespoon red wine vinegar
  • ½ teaspoon Kosher salt
  • ¼ teaspoon cracked black pepper

Instructions
 

  • In a large bowl, combine all of the ingredients. Refrigerate until ready to use. Enjoy!
