Fresh Corn and Tomato Salad

Ingredients
  

  • 3 ears corn, kernels removed
  • 1 pint grape tomatoes, halved
  • 4 scallions, thinly sliced
  • 2 radishes, thinly sliced
  • 1 avocado, sliced
  • 1 jalapeño, seeded the diced or sliced
  • ½ cup roughly chopped fresh cilantro
  • 1 lime, juiced
  • ¼ cup olive oil
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon cracked black pepper
  • ¼ cup crumbled cotija/feta or shredded mozzarella cheese

Instructions
 

  • In a serving bowl, combine corn, tomatoes, scallions, radishes, avocado, jalapeño, and cilantro.
  • Squeeze lime juice over salad, drizzle with olive oil and season with salt and pepper; toss gently to combine. Top with cheese. Enjoy!
