halved

scallions,
thinly sliced

radishes,

avocado,
sliced

jalapeño,
seeded the diced or sliced

roughly chopped fresh cilantro

lime,
juiced

olive oil

teaspoon
kosher salt,
plus more to taste

cracked black pepper

crumbled cotija/feta or shredded mozzarella cheese
Instructions
In a serving bowl, combine corn, tomatoes, scallions, radishes, avocado, jalapeño, and cilantro.
Squeeze lime juice over salad, drizzle with olive oil and season with salt and pepper; toss gently to combine. Top with cheese. Enjoy!
