New York Strip Steak with Wild Mushrooms and Herby Butter

  • Steak:
  • 4 New York strip steaks 8-10 ounces each
  • salt and pepper
  • 2 tablespoons neutral flavored oil such as canola, grapeseed, or safflower oil
  • 4 tablespoons herby garlic butter
  • 2 garlic cloves smashed
  • 5 sprigs fresh thyme
  • Herby Garlic Butter:
  • 8 tablespoons 1 stick butter
  • 6 sprigs fresh thyme or 3 sprigs rosemary
  • 3 garlic cloves, finely chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Mushrooms:
  • 2 tablespoons olive oil
  • 12 ounces mushrooms, such as maitake, oyster, and/or king trumpet, cut into large pieces
  • kosher salt and freshly ground pepper
  • 3 tablespoons butter, cut into pieces
  • 2 sprigs thyme
  • 2 garlic cloves, crushed


  • Compound Butter:
  • In a small bowl, mix together the softened butter, herbs, garlic, and salt + pepper, set aside.
  • Mushrooms:
  • Heat oil in a large heavy based skillet over medium-high until just beginning to smoke. Arrange mushrooms in skillet in a single layer and cook, undisturbed, until bottom side is golden brown, about 3 minutes. Season with salt and pepper, toss mushrooms, and continue to cook, tossing often and reducing heat as needed to avoid scorching, until golden brown all over, about 5 minutes more.
  • Reduce heat to medium and add butter, thyme sprigs, and garlic to skillet. Tip skillet toward you so butter pools at bottom edge. Spoon foaming butter over mushrooms until butter smells nutty, about 4 minutes. Remove mushrooms from skillet with a slotted spoon.
  • Steak:
  • Let the steaks sit at room temperature for 30 minutes.
  • Preheat the oven to 450 degrees F. Season the steaks on both sides with salt and pepper to taste.
  • Heat the same pan used for the mushrooms over high heat. Add the oil to the pan. Place the strip steaks in the pan in a single layer. Cook for 3-4 minutes per side or until deep golden brown. Add the butter to the pan. After the butter has melted, add the garlic cloves and thyme sprigs to the pan. Stir to combine. Spoon the butter mixture over the steaks. Place the meat in the oven and bake for 5-7 minutes or until a meat thermometer registers 140 degrees F for a medium steak.
  • Remove the pan from the oven. Let the steak rest for 5 minutes. Spoon the pan drippings over the steak, then slice and serve with the mushrooms and extra butter, if desired. Enjoy!
