Peach, Watermelon, and Feta Salad

  • Salad:
  • ½ small seedless watermelon, cut into wedges
  • 1 yellow peach, thinly sliced
  • 4 tablespoons fresh mint, (torn or small leaves), plus extra for garnish
  • 6 ounces fresh feta cheese, cubed
  • 1 seedless cucumber, sliced into ½ inch thick rounds (optional)
  • Vinaigrette:
  • 4 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper


  • Place watermelon, peaches, cucumbers (if using), and feta in a serving platter.
  • In a small bowl whisk together the vinaigrette ingredients and drizzle over the salad.
  • Season the mixture with salt and pepper to taste. Garnish with mint. Enjoy!
