Strawberry + Spinach Salad with Poppyseed Dressing
Ingredients
- Salad:
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 2 avocados, peeled, pitted and sliced
- 1 seedless cucumber, sliced
- 3-4 radishes, thinly sliced
- Poppyseed Dressing:
- 1/3 cup olive oil
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon poppy seeds
- ¼ teaspoon kosher salt
- pinch cracked black pepper
Instructions
- In a small bowl with a whisk, or in a jar with a tight-fitting lid, add the oil, vinegar, honey, poppy seeds, and salt + pepper.
- Stir or shake to combine. Allow the flavors to blend at room temperature while preparing the salad.
- In a salad bowl toss together spinach, strawberries, avocado, cucumber, and radishes. Drizzle about 1/3 of the dressing (or more) over salad. Serve immediately. Enjoy!
