Asian Cucumber Salad

Servings 4 Servings


  • 1 seedless cucumber, thinly sliced
  • 1 teaspoon kosher salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon black or white sesame seeds


  • Add the sliced cucumber to a colander and toss with the salt. Set the colander on top of a plate (the salt will pull liquid from the cucumbers). Let sit for 20-30 minutes.
  • In a bowl, whisk vinegar, sesame oil, soy sauce, and honey. Add the drained cucumber to the bowl, and garnish with red pepper flakes, and sesame seeds. Enjoy!
