- 2 pounds fresh strawberries, washed and hulled
- 3 cups white sugar
- ¼ cup lemon juice
- 2 tablespoons powdered fruit pectin
- Dice strawberries and add to a heavy bottomed saucepan. Add in the sugar, lemon juice and pectin. Stir over low heat until the sugar is dissolved. Increase heat to medium-high, stirring often until strawberries start to juice and simmer along the edge of the pot. Mash the strawberries to a desired consistency while continuing to cook an additional 15 minutes or until the mixture is thickened. Pour the jam into jars. Seal and let cool to room temperature.
- Once cooled to room temperature store the jam jars in the refrigerator. Enjoy!
