Oven Baked Salmon with Herby Butter


  • 1 tablespoon olive oil
  • 1 pound salmon, preferably wild-caught
  • 6 tablespoons butter, softened
  • 1 shallot, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 lemon, zested
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon drained capers, for serving
  • lemon slices or wedges, for serving (optional)


  1. Preheat oven to 275º Fahrenheit. Line a large rimmed baking sheet with parchment paper, then drizzle with olive oil. Pat salmon dry with a paper towel, then place on baking sheet.
  2. In a small bowl, combine butter, chives, dill, parsley, lemon zest, salt, and pepper. Mix well, then spread evenly on top of the fish.
  3. Bake salmon until just opaque in center, about 18-20 minutes. Remove from oven, sprinkle capers on top and serve immediately. Enjoy!
