Oven Baked Salmon with Herby Butter


  • 1 tablespoon olive oil
  • 1 pound salmon, preferably wild-caught
  • 6 tablespoons butter, softened
  • 1 shallot, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 lemon, zested
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon drained capers, for serving
  • lemon slices or wedges, for serving (optional)


  • Preheat oven to 275º Fahrenheit. Line a large rimmed baking sheet with parchment paper, then drizzle with olive oil. Pat salmon dry with a paper towel, then place on baking sheet.
  • In a small bowl, combine butter, chives, dill, parsley, lemon zest, salt, and pepper. Mix well, then spread evenly on top of the fish.
  • Bake salmon until just opaque in center, about 18-20 minutes. Remove from oven, sprinkle capers on top and serve immediately. Enjoy!
