Strawberry + Spinach Salad with Poppyseed Dressing

  • Salad:
  • 6 cups fresh baby spinach
  • 1 pint strawberries, hulled and sliced
  • 2 avocados, peeled, pitted and sliced
  • 1 seedless cucumber, sliced
  • 3-4 radishes, thinly sliced
  • Poppyseed Dressing:
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • ¼ teaspoon kosher salt
  • pinch cracked black pepper


  • In a small bowl with a whisk, or in a jar with a tight-fitting lid, add the oil, vinegar, honey, poppy seeds, and salt + pepper.
  • Stir or shake to combine. Allow the flavors to blend at room temperature while preparing the salad.
  • In a salad bowl toss together spinach, strawberries, avocado, cucumber, and radishes. Drizzle about 1/3 of the dressing (or more) over salad. Serve immediately. Enjoy!
