Greek Pasta Salad

Ingredients
  

  • 16 ounces short pasta of choice, cooked
  • 1 long seedless cucumber, diced
  • 1 15-ounce can chickpeas, drained
  • 1 pint grape tomatoes, halved
  • ½ cup feta cheese, cubed
  • ½ cup sliced pitted olives
  • cup red onion diced
  • Vinaigrette:
  • ½ cup red wine vinegar
  • 1 cup olive oil
  • 1 tablespoon dried oregano leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon cracked black pepper

Instructions
 

  • Combine red wine vinegar, olive oil, oregano, garlic powder, salt, and black pepper in a small bowl. Add cucumbers, chickpeas, tomatoes, olives, red onions, and cooked pasta; toss to combine. Top with feta cheese and refrigerate at least 2 hours before serving. Enjoy!
