Asian Cucumber Salad
Ingredients
- 1 seedless cucumber, thinly sliced
- 1 teaspoon kosher salt
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon honey
- ¼ teaspoon red pepper flakes
- 1 tablespoon black or white sesame seeds
Instructions
- Add the sliced cucumber to a colander and toss with the salt. Set the colander on top of a plate (the salt will pull liquid from the cucumbers). Let sit for 20-30 minutes.
- In a bowl, whisk vinegar, sesame oil, soy sauce, and honey. Add the drained cucumber to the bowl, and garnish with red pepper flakes, and sesame seeds. Enjoy!
