Cantaloupe + Prosciutto Salad


  • 1 ripe cantaloupe, cut in wedges
  • ½ pound prosciutto, sliced
  • ¼ cup crumbled goat cheese
  • ½ fresh lime, juiced
  • 2 tablespoons honey
  • 3- 4 sprigs fresh mint, torn
  • 2 teaspoons olive oil
  • sprinkle of coarse salt + cracked black pepper


  • Place melon wedges in large serving platter. Wrap each wedge with a slice of prosciutto. Add the goat cheese, lime juice, honey, and mint over the melon. Drizzle olive oil and finish with a pinch of course sea salt. Enjoy!


To make ahead, slice and cover melon wedges with paper towel and then plastic wrap; refrigerate until ready to use. Add remaining ingredients right before serving.
