Brown-Butter Chocolate Chip-Banana Bread

Ingredients
  

  • 10 tablespoons brown butter, divided
  • 4 ripe bananas
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup + 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1/3 cup chocolate chips

Instructions
 

Preheat oven to 350 degrees Fahrenheit.

    Grease a 9-by5-inch loaf pan with cooking spray.

      Brown butter in a small saucepan. Remove 2 tablespoons and set aside to use once the banana bread has been baked.

        Combine 3 bananas and eggs until well mixed and mushy. Add vanilla and give it a stir.

          In a large bowl, combine flour, baking powder and salt. Add 1 cup brown sugar, cinnamon and nutmeg. Add the banana-egg mixture to the dry ingredients and mix until combined. Pour cooled brown butter and stir. Gently mix in ½ cup chocolate chips. Transfer mixture to loaf pan and top off with remaining chocolate chips.

            Slice remaining banana in half lengthwise and sprinkle 2 tablespoons of brown sugar all over. Shake off excess and place on top of batter.

              Bake approximately 50 minutes (depending on oven).

                Remove from oven and brush reserved brown butter all over. Cool, slice and enjoy!
