Wedge Salad with Green Goddess Dressing

Servings 4 Servings


  • Dressing:
  • ¾ cup ice cold water
  • 1 ripe avocado
  • 2 green onions, roughly chopped
  • ¼ cup fresh basil
  • 3 tablespoons chopped fresh dill
  • 3 tablespoons chopped fresh tarragon
  • ½ fresh lemon, zested and juiced
  • 2 tablespoons extra-virgin olive oil
  • ¼ teaspoon kosher salt, plus more to taste
  • Salad:
  • 1 head of iceberg lettuce
  • 4 slices of bacon, cooked and crumbled bacon (optional)
  • 1 pint cherry tomatoes
  • 1 tablespoon chopped chives


  • Place water, avocado, green onions, basil, tarragon, dill, lemon zest, and juice in a blender. Pulse for 10 seconds, and add salt and pepper. Slowly pour in olive oil and purée until smooth. Taste for seasoning.
  • To serve, cut lettuce into desired number of wedges. Top each wedge with dressing, bacon, tomatoes, and chives. Enjoy!
