Ropa Vieja Sliders
Ingredients
- Sliders:
- 2 tablespoons butter, softened
- 1 (12-count) pack KING'S HAWAIIAN Original Sweet Rolls
- ⅓ cup garlic mayonnaise, recipe below
- 3 cups leftover cooked Ropa Vieja, https://themadtable.com/ropa-vieja-shredded-beef/
- 1 cup shredded Mozzarella cheese
- 3 tablespoons parsley butter, recipe below
- Garlic Mayo:
- ½ cup mayonnaise
- 2 tablespoons fresh minced parsley
- 2 garlic cloves, smashed into a paste
- 1 tablespoon Dijon mustard
- ¼ teaspoon kosher salt
- pinch ground black pepper
- Parsley Butter:
- 3 tablespoons butter, melted
- 1 tablespoon fresh minced parsley
- pinch kosher salt
Instructions
- Preheat oven to 350°F. Brush the bottom of an oven-proof pan with 2 tablespoons of softened butter.
- For the garlic mayo, combine mayonnaise, parsley, garlic, Dijon, salt, and black pepper in a small bowl; stir to combine.
- Slice the entire sheet of rolls through the middle with a serrate knife, keeping the tops and bottoms intact. Place the bottom sheet of the rolls in the prepared pan. Spread the mayo evenly over the layer of bread and top with the Ropa Vieja, mozzarella cheese and top half of the rolls. Cover the pan with foil paper and transfer to the oven and bake for 15 minutes.
- Meanwhile, make the parsley butter by combining melted butter, parsley and salt in a small bowl; stir to combine.
- Remove the pan from the oven, brush the parsley butter on the top of the rolls and transfer the uncovered pan back to oven for 10 minutes.
- Cut the rolls into 12 individual rolls. Serve right away. Enjoy!
