Guava Glazed Shrimp
Ingredients
- 2 tablespoons olive oil
- 1½ pounds large shrimp, peeled and deveined
- 1 teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 cloves roasted garlic, whole
- 2 tablespoons butter
- ½ cup guava bbq sauce, homemade or store-bought
- chopped green onions, for garnish
- sesame seeds, for garnish (optional)
- Guava BBQ Sauce:
- 1 cup cubed guava paste
- ¼ cup apple cider vinegar
- ¼ cup BBQ sauce
- ¼ cup water
- 2 tablespoons honey
- 1 tablespoons chipotle pepper with sauce
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon finely minced garlic
- 1 tablespoon finely minced ginger
Instructions
- Heat oil in a medium sized skillet over medium-high heat. Add the shrimp and season with paprika, salt and pepper. Cook the shrimp about 2 minutes, add garlic, and butter.
- Pour guava sauce over the shrimp. Cook until the sauce starts to thicken and coats the shrimp. Garnish with green onions. Enjoy!
- Guava BBQ Sauce:
- Place a small saucepan over medium heat and add the guava paste, apple cider vinegar, water, lime juice, honey, chipotle pepper, soy sauce, Worcestershire sauce, garlic, ginger, salt, and black pepper; stir to combine. Bring to a boil and reduce the heat to low, letting it simmer for 10 minutes, or until slightly reduced and thickened. Remove the sauce from the heat and let it cool. It will continue to thicken as it cools.
