Fresh Corn and Tomato Salad
Ingredients
- 3 ears corn, kernels removed
- 1 pint grape tomatoes, halved
- 4 scallions, thinly sliced
- 2 radishes, thinly sliced
- 1 avocado, sliced
- 1 jalapeño, seeded the diced or sliced
- ½ cup roughly chopped fresh cilantro
- 1 lime, juiced
- ¼ cup olive oil
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon cracked black pepper
- ¼ cup crumbled cotija/feta or shredded mozzarella cheese
Instructions
- In a serving bowl, combine corn, tomatoes, scallions, radishes, avocado, jalapeño, and cilantro.
- Squeeze lime juice over salad, drizzle with olive oil and season with salt and pepper; toss gently to combine. Top with cheese. Enjoy!
