Ingredients
- -Tacos
- 2 tablespoons olive oil
- 1-½ pounds ground beef
- 2 cloves garlic, minced
- 1 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1-teaspoon cumin
- 1-cup enchilada sauce
- kosher salt + pepper
- 8 flour tortillas, warmed
- 8 crispy tortillas, warmed
- 1/2 cup cotija cheese
- fresh cilantro
- 1 ear of corn
-Salsa
- 2 medium tomatoes, diced
- ½ red onion, finely chopped
- 1 garlic clove, minced
- 1/2 fresh jalapeno pepper, seeded and chopped
- 1-teaspoon ground cumin
- 5-6 sprigs fresh cilantro, finely chopped
- ½ fresh lime, squeezed
- 1-tablespoon fresh orange juice
- 1-teaspoon olive oil
- Salt and pepper to taste
-Cilantro Lime Cream
- ¼ cup sour cream
- 2 tablespoons chopped fresh cilantro
- 1 small garlic clove, minced
- 1-teaspoon olive oil
- juice and zest from one lime salt and pepper to taste
Instructions
- -Taco
- Heat oil in a large pan over medium heat. Add onions and sauté until translucent (3-5 minutes). Add garlic and continue to sauté 1-2 minutes, making sure garlic does not burn. Add ground beef, chili powder, paprika, cumin, salt and pepper. Cook beef 8-10 minutes. Add enchilada sauce and cook 7-8 minutes longer. Top meat with fresh cilantro.
- -Corn
- Preheat a grill or cast iron grill pan. Drizzle the corn with olive oil, salt and pepper. Grill, rotating the corn until slightly charred, 4-5 minutes. Let cool and cut kernels off the corn.
-Salsa
- In a medium bowl, combine tomato, onion, garlic and jalapeno pepper. Season with cumin, salt and pepper and stir well. Add cilantro, olive, lime and orange juice.
-Cilantro-Lime Cream
- Stir all ingredients in a bowl until combined.
- To assemble, wrap warm soft shell around crispy shell. Add ground beef, corn, cheese, fresh salsa, and cilantro lime cream and sliced avocado (optional). Enjoy
