Preheat oven to 375 degrees F.
Grease 14-15 mini-muffin cups.
Mix sugar, butter and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups.
Bake in the preheated oven until the tops are lightly golden, 11-12 minutes.
Chocolate Sauce:
In a small saucepan, heat cream and corn syrup 2-3 minutes, do not let it come to a rolling boil.
Place chocolate in a large glass or metal bowl. Pour warm cream and syrup over chocolate and let set 3-4 minutes. Whisk until smooth.
Cinnamon Sugar Butter Coating:
Melt butter in a bowl. In a separate now, combine 1/2 cup of sugar with the cinnamon.
Remove muffins from their cups, dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture and/or dip in chocolate. Add sprinkles if you wish. Enjoy!
