3 Cook-Once Ground Beef Recipes You Must Try

I don’t know about you, but the last thing I want to do after a full day at the office and driving kids to and from practice is to come home and cook a full meal! Half the time, I rather order take-out, but we all know that can get ridiculously expensive- so that’s out!

Here’s my solution to providing my family with weeknight dinners, COOK ONCE, EAT 3 TIMES, with my Saucy Laura’s Lean™ 96% Lean Ground Beef recipe! #ad It’s a win-win! You cook one recipe, everyone gets to enjoy a different home-cooked meal, and who knows you might even have extra time to spark up a meaningful conversation!

It is important to me that I buy ground beef that was raised without added hormones and antibiotics. It makes me feel good to know that I get to serve my family a healthier choice without sacrificing the taste of my food. The 96% lean ground beef is also great for people who are looking for good sources of clean, lean protein in their diets and their lifestyle. Here is my saucy ground beef recipe that you can serve weeknights, 3 different ways!

Saucy Ground Beef Recipe Ingredients:

Yield: 4 Servings

Ingredients:

2 tablespoons of olive oil

1 large yellow onion, chopped

1 green or red bell pepper, chopped

4 garlic cloves, finely chopped

1 pound ground beef

1 teaspoon ground cumin

1 teaspoon kosher salt

¼ teaspoon cracked black pepper

1 (8 ounce) cans of tomato sauce

Instructions:

In a large pan, heat 2 tablespoons of olive oil over medium heat and cook the onion and bell pepper until soft.

Add the garlic and cook for 20-30 seconds (making sure not to burn the garlic).

Mix in the ground beef and stir. Season with cumin, salt, and black pepper.

Add tomato sauce and continue cooking over medium heat (about 15 minutes), stirring occasionally. If the sauce thickens too much, you can add a little bit of water.

Cook-Once, Serve 4 Healthier Ways

Serve with Lettuce Wraps:

Separate, wash and dry lettuce leaves of one head of lettuce. Arrange on a plate. Fill each lettuce leaf with 1/2 cup saucy ground beef. Garnish with topping of choice: purple cabbage, feta cheese, and green onions.

Serve with Baked Potatoes:

Place potatoes on a baking sheet and use a fork to poke holes. Rub with 1 tablespoon of olive oil. Roast for 45-55 minutes, or until fork tender and the skin is crisp. Remove from oven. Once potatoes are cool, top with saucy ground beef and optional toppings: cheddar cheese, guacamole, sour cream, chives, and green onions.

Serve Cuban Bowl Style:

Combine the rinsed rice, water, 1 tablespoon olive oil and ½ teaspoon salt in a pot and bring to a boil. Cover, reduce heat to low, and simmer for 45 minutes. Once cooked, use a fork to fluff rice. Add some rice to a bowl, top with saucy ground beef, black beans, avocado, tomatoes, and red onion. Serve with a lime wedge.
