The Very Best Chicken Salad


  • 1 store bought rotisserie chicken, chopped (skin and bones discarded) or 4 boneless leftover cooked chicken breasts
  • 1 crisp apple, cored and cut into ½ -inch pieces
  • 1 cup red seedless grapes, thinly sliced
  • 3 tablespoons red onion, chopped
  • 3 tablespoons chopped fresh tarragon leaves
  • 1 cup mayonnaise or garlic mayo
  • ½ fresh lemon, juiced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • ¼ teaspoon black pepper
  • ½ cup chopped candied pecans, regular pecans, or walnuts, toasted


  • In a large bowl, combine chicken, apples, grapes, red onions, onions, tarragon, mayo, Dijon, lemon juice, black pepper, olive oil, and pecans, if desired. Stir to combine.
  • Spread over, bread, and crackers, or add a scoop or 2 to lettuce leaves and eat as a lettuce wrap. Enjoy!


Mayo can be partially subbed with Greek yogurt
