The Very Best Chicken Salad
Ingredients
- 1 store bought rotisserie chicken, chopped (skin and bones discarded) or 4 boneless leftover cooked chicken breasts
- 1½-2 cups red seedless grapes, halved
- 1 crisp apple, cored and cut into ½ -inch pieces
- 3 tablespoons red onion, chopped
- 1 cup mayonnaise
- ½ fresh lemon, juiced
- 1 small garlic clove, minced
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped fresh tarragon leaves
- 1 tablespoon olive oil
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ½ cup chopped walnuts, toasted
Instructions
- In large bowl, combine chicken, grapes, apples, and onions.
- In a separate bowl or large measuring cup, mix mayo, lemon juice, garlic, mustard, tarragon, olive oil and salt + pepper.
- Pour mayo mixture over chicken salad and mix until everything is well coated. Add walnuts and give it one more stir. Enjoy!
Notes
Mayo can be partially subbed with Greek yogurt
