The Very Best Chicken Salad


  • 1 store bought rotisserie chicken chopped (skin and bones discarded) or 4 boneless chicken breasts, cooked
  • 1-2 tablespoons red onion chopped
  • 1 small garlic clove minced
  • 1 crisp apple cored and cut into 1/2-inch pieces
  • ½ cup red seedless grapes halved and slightly chopped
  • tablespoons chopped fresh tarragon leaves
  • ½ cup mayonnaise or more to taste
  • 1 tablespoon dijon mustard
  • ½ fresh lemon juiced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped candied pecans


  • In a large bowl, combine chicken, onions, garlic; combine well.
  • In a separate bowl or large measuring cup, mix mayo, mustard, lemon juice, olive oil and salt + pepper.
  • Pour mayo mixture over chicken salad and mix until everything is well coated. Add candied pecans and give it one more stir and your good to go! Enjoy!


Mayo can be partially subbed with Greek yogurt
