The Very Best Chicken Salad


  • 1 store bought rotisserie chicken, chopped (skin and bones discarded) or 4 boneless leftover cooked chicken breasts
  • 1½-2 cups red seedless grapes, halved
  • 1 crisp apple, cored and cut into ½ -inch pieces
  • 3 tablespoons red onion, chopped
  • 1 cup mayonnaise
  • ½ fresh lemon, juiced
  • 1 small garlic clove, minced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons chopped fresh tarragon leaves
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chopped walnuts, toasted


  • In large bowl, combine chicken, grapes, apples, and onions.
  • In a separate bowl or large measuring cup, mix mayo, lemon juice, garlic, mustard, tarragon, olive oil and salt + pepper.
  • Pour mayo mixture over chicken salad and mix until everything is well coated. Add walnuts and give it one more stir. Enjoy!


Mayo can be partially subbed with Greek yogurt
