Guava Glazed Air Fryer Salmon Bowls
Ingredients
- 2 pounds wild caught salmon, cut into 2-inch chunks
- ⅓ cup soy sauce
- ¼ cup guava marmalade
- ¼ cup orange juice
- 1 teaspoon kosher salt
- ¼ teaspoon cayenne pepper
- 2 cups cooked white Jasmine rice
- Spicy Mayo:
- ¼ cup mayonnaise
- 1 tablespoon sriracha
- Optional Toppings:
- avocado
- carrots
- cucumber
- edamame
- green onions
Instructions
- Salmon Bowls:
- In a small bowl or measuring cup, whisk together the orange juice, soy sauce, guava marmalade, cayenne, and pepper. Pour marinade over the salmon chunks and let sit for 15 minutes.
- Spray air fryer basket with cooking spray. Drain the marinade and set aside. Place the salmon in the basket and set air fryer to 400°F degrees. Cook for 8-10 minutes, or until the salmon has reached your desired doneness.
- Meanwhile, pour the reserved marinade into a small sauce pan and bring to a boil over medium-high heat. Cook for 2-3 minutes or until the sauce has reduced into a glaze.
- Drizzle the glaze over the salmon and serve with rice, toppings of choice, and spicy mayo. Enjoy!
- Spicy Mayo:
- Whisk together mayonnaise and Sriracha. Refrigerate in a covered container until ready to serve.
