  • 2 pounds wild caught salmon, cut into 2-inch chunks
  • cup soy sauce
  • ¼ cup guava marmalade
  • ¼ cup orange juice
  • 1 teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
  • 2 cups cooked white Jasmine rice
  • Spicy Mayo:
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha
  • Optional Toppings:
  • avocado
  • carrots
  • cucumber
  • edamame
  • green onions

  • Salmon Bowls:
  • In a small bowl or measuring cup, whisk together the orange juice, soy sauce, guava marmalade, cayenne, and pepper. Pour marinade over the salmon chunks and let sit for 15 minutes.
  • Spray air fryer basket with cooking spray. Drain the marinade and set aside. Place the salmon in the basket and set air fryer to 400°F degrees. Cook for 8-10 minutes, or until the salmon has reached your desired doneness.

  • Drizzle the glaze over the salmon and serve with rice, toppings of choice, and spicy mayo. Enjoy!
  • Spicy Mayo:
  • Whisk together mayonnaise and Sriracha. Refrigerate in a covered container until ready to serve.
