1store bought rotisserie chicken,chopped (skin and bones discarded) or 4 boneless leftover cooked chicken breasts
1crisp apple,cored and cut into ½ -inch pieces
¾ to 1cupwhole red seedless grapes, thinly sliced
3tablespoonsred onion,chopped
3tablespoonschopped fresh tarragon leaves
1cupGreek yogurt or mayo
½ fresh lemon,juiced
1tablespoonDijon mustard
1tablespoonolive oil
¼teaspoonblack pepper
½cupchopped candied pecans, regular pecans, or walnuts,toasted (optional)
Instructions
In a large bowl, combine chicken, apples, grapes, red onions, onions, tarragon, mayo, Dijon, lemon juice, black pepper, olive oil, and pecans, if desired. Stir to combine.
Spread over, bread, and crackers, or add a scoop or 2 to lettuce leaves and eat as a lettuce wrap. Enjoy!
