Oven Baked Mediterranean-Style Grouper
Ingredients
- 4 (1½ pounds) grouper fillets
- 1 tablespoon dry oregano leaves
- 1 teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 4-6 whole garlic cloves, preferably confit or roasted
- 1 lemon, juiced
- 4-6 tablespoons olive oil
- 4 campari or cocktail tomatoes, quartered
- ¼ cup Castelvetrano olives
- 2 tablespoons chopped fresh dill, for garnish
Instructions
- Pre-heat oven to 400°F.
- Pat the fish dry on both sides and season with oregano, paprika, salt, and black pepper.
- Add 2 tablespoons olive oil to an oven-proof baking dish. Place fish over the oil and top with whole garlic cloves, tomatoes, olives and lemon juice. Finish with a good drizzle of olive oil all over the toppings. Transfer to preheated oven and bake for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork.
- Remove from heat and garnish with fresh dill, and more lemon juice, if desired. Enjoy!
