Oven Baked Mediterranean-Style Grouper


  • 4 (1½ pounds) grouper fillets
  • 1 tablespoon dry oregano leaves
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4-6 whole garlic cloves, preferably confit or roasted
  • 1 lemon, juiced
  • 4-6 tablespoons olive oil
  • 4 campari or cocktail tomatoes, quartered
  • ¼ cup Castelvetrano olives
  • 2 tablespoons chopped fresh dill, for garnish


  • Pre-heat oven to 400°F.
  • Pat the fish dry on both sides and season with oregano, paprika, salt, and black pepper.
  • Add 2 tablespoons olive oil to an oven-proof baking dish. Place fish over the oil and top with whole garlic cloves, tomatoes, olives and lemon juice. Finish with a good drizzle of olive oil all over the toppings. Transfer to preheated oven and bake for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork.
  • Remove from heat and garnish with fresh dill, and more lemon juice, if desired. Enjoy!
