Black Bean Burgers with Chipotle Mayo

Ingredients
  

  • Burgers:
  • 1 14-ounce can black beans, drained, (reserve some of the liquid)
  • ½ cup frozen corn
  • ½ red onion, chopped
  • 2 cloves garlic
  • 1 tablespoon taco seasoning
  • ½ teaspoon kosher salt
  • ¼ cup fresh cilantro
  • 1 egg
  • ½ cup bread crumbs
  • 2 tablespoons olive oil
  • 4 potato rolls, slider size
  • Optional Garnishes:
  • cheese
  • guacamole
  • salsa
  • sour cream
  • Chipotle Mayo:
  • 1 cup mayo
  • 1 canned chipotle pepper chopped, plus 2 teaspoons of the adobo sauce
  • ¼ teaspoon kosher salt

Instructions
 

  • Burgers:
  • Preheat oven to 400°F. Line a sheet pan with parchment paper. Set aside.
  • In a large bowl, combine beans, corn, onion, garlic, taco seasoning, salt, cilantro, egg, and bread crumbs. Mix well; add 1 tablespoon of the reserved black bean liquid if needed to add moisture to the mixture. Shape into 4 patties and place on prepared pan. Drizzle olive oil on top of the sliders and transfer pan to the oven. Cook for 20 minutes.
  • Remove siders form oven and assemble the burgers with topping of choice. Enjoy!
  • Chipotle Mayo:
  • Stir chopped chipotle pepper, adobo sauce, and salt until smooth. with plastic wrap and refrigerate until ready to use.
