Easy One Pan Sausage Pasta

Ingredients
  

  • 1 pound rigatoni or any tube pasta of preference
  • ¼ cup olive oil, plus more for finishing
  • 1 pound ground mild Italian sausage
  • 1 pound cherry tomatoes
  • 1 teaspoon kosher salt
  • 6 cloves garlic confit, garlic paste, or minced raw garlic
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes, plus more for finishing
  • 1 (24 ounce) jar marinara sauce
  • 4 ounces fresh spinach
  • 1 cup grated parmesan cheese, plus more for topping
  • 2 tablespoons chopped fresh parsley
  • 1 cup grated mozzarella cheese, plus more to taste
  • 2 burrata cheese balls, torn in half
  • fresh basil, for topping

Instructions
 

  • Preheat the oven to 375° F.
  • Bring a large pot of generously salted water to a boil. Cook pasta 2 minutes less than the package directions. Drain the pasta and reserve 1 cup of the starchy water.
  • Heat oil in a large oven-proof skillet. Add the ground sausage and cook for 5-6 minutes. Add the cherry tomatoes, salt, garlic, oregano, and red pepper flakes. Continue to cook for 3 to 4 minutes, or until the tomatoes start to burst and release some of their juices. Add the marinara sauce, spinach, ½ cup of reserved starchy water, ½ cup parmesan cheese, and fresh parsley. Bring the sauce to a simmer. Stir in the cooked pasta, along with the remaining ½ cup of starchy water. Top with the shredded mozzarella and bake for 8 minutes, or until the cheese is melted.
  • Finish with burrata cheese, a drizzle of olive oil, crushed red pepper flakes, fresh basil, and extra parm, if desired. Enjoy!
