Mexican Street Corn Salad


  • 5 ears fresh corn, husks and silk removed
  • 2 tablespoons olive oil
  • 3 green onions, sliced
  • 1 jalapeño, finely diced
  • ¼ cup chopped fresh cilantro, plus more for garnish
  • 1 fresh lime, juiced
  • 1 garlic clove, finely minced
  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 1 teaspoon chili powder
  • pinch of smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper
  • ¼ cup crumbled cotija cheese or feta


  • Preheat grill or pan on high heat. Brush corn with oil. Grill corn, turning every 2-3 minutes until slightly charred on all sides. Cool and cut corn kernels off the cob.
  • In a medium bowl, combine corn kernels, green onions, jalapeno, cilantro, lime juice, garlic, mayonnaise, sour cream, chili powder, paprika, and salt + pepper; stir to combine. Garnish with cheese and extra cilantro. Enjoy!


Serve with grilled shrimp and make it a main! So good!
