Melon Caprese Skewers

Ingredients
  

  • Melon Skewers:
  • ½ small cantaloupe, scooped into balls
  • ½ small honeydew, scooped into balls
  • ½ small seedless watermelon, scooped into balls
  • 10 fresh water-packed mozzarella balls, drained
  • 20 fresh basil or spinach leaves
  • 10 wooden skewers
  • sea salt
  • black pepper
  • Basil Vinaigrette:
  • 2 cups tightly packed fresh basil leaves, stems removed
  • 2 tablespoons pine nuts
  • cup parmesan cheese
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt

Instructions
 

  • Melon Skewers:
  • Thread ingredients on the skewer – melon balls, basil leaves and mozzarella balls.
  • Drizzle with basil vinaigrette and sprinkle with sea salt and black pepper.
  • Basil Vinaigrette:
  • Combine all the ingredients for the basil vinaigrette in a high powered blender and blend for 60 seconds until smooth. Taste and check for seasoning. Enjoy!
