Mexican Street Corn Salad
Ingredients
- 5 ears fresh corn, husks and silk removed
- 2 tablespoons olive oil
- 3 green onions, sliced
- 1 jalapeño, finely diced
- ¼ cup chopped fresh cilantro, plus more for garnish
- 1 fresh lime, juiced
- 1 garlic clove, finely minced
- 3 tablespoons mayonnaise
- 3 tablespoons sour cream
- 1 teaspoon chili powder
- pinch of smoked paprika
- ½ teaspoon kosher salt
- ¼ teaspoon cracked black pepper
- ¼ cup crumbled cotija cheese or feta
Instructions
- Preheat grill or pan on high heat. Brush corn with oil. Grill corn, turning every 2-3 minutes until slightly charred on all sides. Cool and cut corn kernels off the cob.
- In a medium bowl, combine corn kernels, green onions, jalapeno, cilantro, lime juice, garlic, mayonnaise, sour cream, chili powder, paprika, and salt + pepper; stir to combine. Garnish with cheese and extra cilantro. Enjoy!
Notes
Serve with grilled shrimp and make it a main! So good!
