Chicken Tender Sandwich with Creamy Buffalo Mayo

  • Chicken Sandwich:
  • 1 large French bread loaf, sliced open
  • ½ cup buffalo mayo or sauce of choice, plus more to taste
  • 8 prepared chicken tenders
  • 2 cups shredded cabbage or lettuce
  • 1 celery stalk, thinly sliced
  • 1 cucumber, thinly sliced lengthwise
  • ¼ cup blue cheese, plus more to taste
  • Buffalo Mayo:
  • 1 cup mayonnaise
  • 1 small garlic clove finely minced
  • 1 teaspoon olive oil
  • 2 tablespoons Frank's red hot buffalo sauce, or pepper sauce of choice


  • Spread mayo evenly on bread. Place chicken tenders on bottom half of French bread. Top with cabbage, cucumbers, celery and blue cheese. Cover with remaining bread half. Enjoy!
  • Buffalo Mayo:
  • In a small bowl, combine all ingredients well. Cover and refrigerate until ready to use.
