Melon Caprese Skewers
Ingredients
- Melon Skewers:
- ½ small cantaloupe, scooped into balls
- ½ small honeydew, scooped into balls
- ½ small seedless watermelon, scooped into balls
- 10 fresh water-packed mozzarella balls, drained
- 20 fresh basil or spinach leaves
- 10 wooden skewers
- sea salt
- black pepper
- Basil Vinaigrette:
- 2 cups tightly packed fresh basil leaves, stems removed
- 2 tablespoons pine nuts
- ⅓ cup parmesan cheese
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon kosher salt
Instructions
- Melon Skewers:
- Thread ingredients on the skewer – melon balls, basil leaves and mozzarella balls.
- Drizzle with basil vinaigrette and sprinkle with sea salt and black pepper.
- Basil Vinaigrette:
- Combine all the ingredients for the basil vinaigrette in a high powered blender and blend for 60 seconds until smooth. Taste and check for seasoning. Enjoy!
