Chocolate Chip Crumble Muffins

  • Muffins:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • cup granulated sugar
  • cup vegetable oil
  • ¾ cup milk
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1 cup semi-sweet cholate chips or chunks
  • Streusel:
  • 3 tablespoons all-purpose flour
  • 5 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons cold butter, cubed
  • Optional Topping:
  • 1 tablespoon espresso sugar (the Mad Table Sweet Jo)


  1. Preheat the oven to 350º Fahrenheit. Line a 12 muffin pan with paper liners.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, and salt; set aside.
  3. In a separate large bowl, whisk together the sugar, oil, milk, eggs, and vanilla until mixture is smooth.
  4. Slowly add dry ingredients and incorporate well with wet ingredients. Fold in the chocolate chips.
  5. To make the streusel: In a small bowl, add the flour, brown sugar, cinnamon, and butter. Mix together with your hands until you have a crumbly mixture. Set aside.
  6. Pour batter into the muffin cups and fill two-thirds full. Evenly sprinkle streusel over the batter. Bake for 18-20 minutes (depending on oven) or until a toothpick inserted into the center comes out clean. Garnish with a little espresso sugar. Enjoy!
