Chocolate Chip Crumble Muffins
Ingredients
- Muffins:
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1¼ cup granulated sugar
- ⅓ cup vegetable oil
- ¾ cup milk
- 2 eggs
- 2 teaspoons of vanilla extract
- 1 cup semi-sweet cholate chips or chunks
- Streusel:
- 3 tablespoons all-purpose flour
- 5 tablespoons brown sugar
- 1 teaspoon cinnamon
- 3 tablespoons cold butter, cubed
- Optional Topping:
- 1 tablespoon espresso sugar (the Mad Table Sweet Jo)
Instructions
- Preheat the oven to 350º Fahrenheit. Line a 12 muffin pan with paper liners.
- In a large mixing bowl, combine flour, baking powder, baking soda, and salt; set aside.
- In a separate large bowl, whisk together the sugar, oil, milk, eggs, and vanilla until mixture is smooth.
- Slowly add dry ingredients and incorporate well with wet ingredients. Fold in the chocolate chips.
- To make the streusel: In a small bowl, add the flour, brown sugar, cinnamon, and butter. Mix together with your hands until you have a crumbly mixture. Set aside.
- Pour batter into the muffin cups and fill two-thirds full. Evenly sprinkle streusel over the batter. Bake for 18-20 minutes (depending on oven) or until a toothpick inserted into the center comes out clean. Garnish with a little espresso sugar. Enjoy!
