Herby-Lemon Pea Pesto


  • 1 cup fresh peas- fresh blanched or frozen (thawed)
  • 1 clove garlic
  • 6-8 leaves fresh basil
  • 6-8 leaves fresh mint
  • 2 tablespoons grated fresh parmesan cheese
  • 1 teaspoon salt, plus more to taste
  • ¼ teaspoon fresh black pepper, plus more to taste
  • ½ fresh lemon, juiced
  • 1/3 cup extra virgin olive oil
  • pinch of red pepper flakes, optional


  • Place the peas, garlic, basil, mint, parmesan, salt + pepper in the bowl of a food processor; blitz until coarsely chopped. Add lemon juice and quickly pulse.
  • With the food processor running, slowly add the olive oil and blend until a creamy mixture forms. Stir to combine and season to taste with lemon juice, salt + red pepper flakes.
  • Serve over crusty bread/toast, favorite pasta or pizza, and best when topped with burrata, poached egg, or prosciutto and drizzled with good olive oil!!!! Enjoy
