Instant Pot Crispy Carnitas Tostadas

  • Pork:
  • 3 pounds boneless pork shoulder (Boston Butt), fat removed and cut into 2" pieces
  • 2 tablespoons olive oil, divided- plus more if needed
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 2 teaspoons ground cumin
  • 1 teaspoon cracked black pepper
  • 2 oranges, juiced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup beer
  • 1 onion, sliced
  • 4 cloves garlic, finely chopped
  • Tostadas:
  • oil, for frying
  • corn tortillas
  • kosher salt, to taste
  • Toppings: avocado, cheese, and cilantro, fresh lime, mango, red onion, and shredded cabbage or lettuce for serving


  • Dry the pork chunks with paper towel.
  • In a large bowl, add pork chunks, 1 tablespoon olive oil, oregano, salt, cumin, black pepper, orange juice, chipotle peppers, and beer. Combine the mixture well and transfer to the Instant Pot. Add onion and garlic and lock the lid in place. Cook on high pressure for 35 minutes. Make sure the valve is set to the sealing position.
  • When the cooking time ends, allow the pressure to release naturally. Remove from pot and let cool slightly. Shred pork using two forks. Heat 1 tablespoon of oil in a large nonstick pan or cast-iron skillet over high heat. Add shredded pork in the pan (in batches) with some of the juices. Sear both sides of the until golden brown and crispy. Remove pork from skillet.
  • Wipe the pan clean with a paper towel. Add oil on medium-high heat until oil is hot and bubbly. Working in batches, fry the tortillas, turning once, until crispy, and golden brown, about 1 minute per side. Transfer the tostadas to a paper-towel-lined plate and sprinkle with salt immediately.
  • Top with carnitas and toppings of choice. Enjoy!
