The Flavor Secret: Garlic Butter + High Heat
The key to unforgettable steak bites is high heat and restraint. You want a hard sear on the outside while keeping the inside tender and juicy. The garlic butter finishes the steak with richness and depth, without overpowering the meat.
I love using sirloin, ribeye, or strip steak for this recipe, cuts that stay juicy and flavorful when cooked quickly.
Optional but Highly Recommended: Arugula
This is my chef’s touch ✨
While the steak bites are delicious on their own, I often finish the platter with a handful of fresh arugula.
Why arugula works so well:
- Its natural bitterness cuts through the butter
- Adds freshness and balance
- Makes the dish feel lighter and more composed
Totally optional, but if you’re serving these at a holiday party where there’s already a lot of rich food, it’s a game changer.
Chef Tips for Perfect Steak Bites
1. Let the steak come to room temperature
Cold steak won’t sear properly. Take it out of the fridge 20 to 30 minutes before cooking.
2. Dry the steak well
Moisture is the enemy of browning. Pat the steak dry before seasoning.
3. Don’t overcrowd the pan
Cook in batches if needed. Crowding causes steaming instead of searing.
4. Season generously
Salt right before cooking to help form a beautiful crust.
5. Add garlic at the end
Garlic burns quickly. Stir it into the butter at the very end for maximum flavor without bitterness.
6. Finish with acid (optional)
A tiny squeeze of lemon or splash of balsamic can brighten the entire dish, especially if you skip the arugula.
How to Serve Steak Bites
- As a holiday appetizer with cocktail picks
- Over arugula or mixed greens for a warm steak salad
- Alongside roasted potatoes or crusty bread
- On a charcuterie-style platter for entertaining
Final Thoughts
These holiday steak bites are proof that simple ingredients, cooked well, create the most memorable dishes. They’re rich, comforting, and just elevated enough to feel festive, without keeping you stuck in the kitchen while your guests arrive.
Add the arugula if you want balance, skip it if you’re going full indulgence, either way, this is a recipe you’ll come back to again and again during the holidays.

Garlic Butter Steak Bites
Ingredients
- 1 tablespoon olive oil
- 1½ pound sirloin steak, cut into bite size pieces
- ½ teaspoon kosher salt, plus more to taste
- ½ teaspoon black pepper
- 4 tablespoons butter
- 4 to 5 cloves garlic, minced
- ½ fresh lemon, zested (optional)
- ¼ teaspoon red pepper flakes, (optional)
- ¼ cup fresh arugula or parsley, chopped
Instructions
- Allow the steak to come to room temperature for 30 minutes before cooking. Cut the meat into bite-sized pieces and season them with salt and pepper. Set aside until ready to cook.
- Heat the pan (preferably a cast iron) for 1 to 2 minutes before adding the oil. Add the olive oil and 1 tablespoon of butter, ensure the olive oil is hot and the butter is melted. Add the steak and cook for at least 2 minutes before stirring the steak pieces to get a good sear on them. Continue cooking for another 2 minutes, or until they are golden brown.
- Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, or until the garlic becomes aromatic and starts to brown.
- Pour the garlic butter over the steak bites and toss well. Garnish with parsley and serve. Enjoy!
