Air Fryer Cauliflower Steaks

Ingredients
  

  • Cauliflower Steaks:
  • 1 large head of cauliflower, rinsed and dried
  • ¼ cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • chopped fresh parsley, for garnish
  • sliced green onions, for garnish
  • toasted pine nuts, for garnish
  • Yogurt Sauce:
  • ½ cup Greek yogurt
  • 1 heaping tsp freshly chopped dill
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Prepare the cauliflower by removing its leaves, and by cutting its stem to create a flat base. Cut the cauliflower from top to bottom into about 4 (1-inch) thick steaks.
  • In a small bowl whisk together the olive oil, cumin, oregano, paprika, salt, and black pepper. Brush the oil mixture on each side of the cauliflower steaks.
  • Place the cauliflower in the air fryer basket, cook at 400°F for 12 minutes. Gently flip the steak halfway through cooking.
  • While the cauliflower is roasting, make the yogurt sauce. In a small bowl, mix the yogurt, dill, lemon, garlic, olive oil, salt, and black pepper.
  • Once the cauliflower is ready, remove from the air fryer and garnish with parsley, green onions, and pine nuts. Serve with yogurt sauce. Enjoy!
