To make the pumpkin spice syrup, heat Add all of the ingredients in a small saucepan over medium high heat. Bring to a boil and stir. Reduce the heat to medium low and continue stirring every 2-3 minutes, or until they syrup is well combined and slightly thickened. Remove the syrup from the heat and cool. Transfer to a jar with a lid and refrigerate for up to 2 weeks.
To make the latte, combine the cold milk and pumpkin spice syrup in a tall glass. Blend using a stick blender or hand held frother.
Add ice cubes to a glass, then pour the pumpkin spice milk mixture and coffee. Stir to combine. Enjoy!
