Wedge Salad with Green Goddess Dressing
Ingredients
- Dressing:
- ¾ cup ice cold water
- 1 ripe avocado
- 2 green onions, roughly chopped
- ¼ cup fresh basil
- 3 tablespoons chopped fresh dill
- 3 tablespoons chopped fresh tarragon
- ½ fresh lemon, zested and juiced
- 2 tablespoons extra-virgin olive oil
- ¼ teaspoon kosher salt, plus more to taste
- Salad:
- 1 head of iceberg lettuce
- 4 slices of bacon, cooked and crumbled bacon (optional)
- 1 pint cherry tomatoes
- 1 tablespoon chopped chives
Instructions
- Place water, avocado, green onions, basil, tarragon, dill, lemon zest, and juice in a blender. Pulse for 10 seconds, and add salt and pepper. Slowly pour in olive oil and purée until smooth. Taste for seasoning.
- To serve, cut lettuce into desired number of wedges. Top each wedge with dressing, bacon, tomatoes, and chives. Enjoy!
