Sweet Potato Fries:
Preheat an oven to 425°F. Line a large baking sheet with parchment paper.
Rinse and dry the sweet potatoes. Peel and cut potatoes lengthwise into matchsticks about ¼ inch wide and 3 inches long.
In a large bowl, toss the sweet potatoes with oil, chipotle, garlic powder, and salt + pepper. Spread the potatoes in a single layer (careful not to overcrowd the pan or they will steam and not crisp) on a baking sheet. Roast until tender and golden brown, 25 to 30 minutes.
Transfer sweet potato fries to a serving platter and top with chipotle crema, feta, oregano additional toppings of choice. Serve immediately. Enjoy!
Chipotle Crema:
In a food processor, add the mayo, sour cream, chipotle peppers, lime juice, garlic and a pinch of salt. Process until the sauce becomes smooth and creamy. Set aside or refrigerate until ready to use.
