Spicy Cucumbers and Red Onion Salad

  • 2 large seedless cucumbers, cut into slices
  • 1 red onion, sliced into wedges
  • 1 red chili pepper, sliced and seeded
  • 1 cup rice vinegar
  • 1/3 cup white granulated sugar
  • 2 teaspoons kosher salt


  • Set a strainer over a large bowl. Add the cucumbers and toss with the salt and drain for 1 hour.
  • In another bowl, whisk together the rice vinegar, sugar, and salt until the sugar is completely dissolved.
  • Add the cucumbers, onions, and chili pepper to the vinegar mixture. Let stand at room temperature for 1 hour before serving or refrigerate for up to 1 week. Enjoy!
