Oven Roasted Asparagus

Ingredients
  

  • 1 pound asparagus, ends trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon Spanglish Asadero Barbacoa seasoning mix
  • 1 fresh lemon or ½ orange, zested
  • ¼ cup freshly grated parmesan cheese
  • fresh thyme, for garnish (optional)

Instructions
 

  • Preheat the oven to 425℉.
  • Lay the trimmed asparagus on a baking sheet and drizzle with olive oil. Sprinkle the barbacoa seasoning mix and place into the oven. Roast for 9 minutes, or until fork tender.
  • Once the asparagus is out of the oven, transfer the asparagus to a serving platter and sprinkle with the lemon or orange zest, and parmesan. Garnish with fresh thyme, if desired. Serve immediately. Enjoy!
