Fry the bacon in a large skillet, over medium high heat until crispy. Remove with a slotted spoon and transfer to a paper towel lined plate. Reserve bacon grease in the pan.
In the same pan used to cook the bacon, over medium-high heat, add the brussels and sauté for 5 minutes. Cover the pan with a lid, reduce the heat to medium, and cook for 5-6 minutes, or until fork tender.
Add the garlic, red pepper flakes, salt, and black pepper to the pan, and cook uncovered for 20-30 seconds, making sure that garlic does not burn. Add the bacon back in the pan along with the maple syrup. Give the pan a few shakes. and remove from heat.
