  • 1 pound large shrimp peeled and deveined
  • 3 tablespoons olive oil, plus more to brush on grill
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper
  • 3 tablespoons fresh chopped chives
  • 1 fresh lime, plus wedges for serving

  • Soak the skewers in water for at least a half an hour before grilling.
  • In a large bowl whisk together the oil, oregano, paprika, garlic powder, salt, and pepper. Add the shrimp and toss to coat with the marinade. Marinate for half an hour to an hour.
  • Preheat a grill to medium-high heat- 400°F. Baste the grill grates with some olive oil so that the shrimp don’t stick to the grill.
