Grilled Cheese with Chipotle Butter

Servings 1 Serving


  • Chipotle Butter:
  • 4 tablespoons butter, softened
  • 1 chipotle chile in adobo, minced, plus 1 teaspoon of adobo sauce from the can
  • Grilled Cheese:
  • 2 slices ½”-thick seedy bread
  • 2 tablespoons chipotle butter
  • 4 slices American cheese or cheddar
  • 1-2 tablespoons everything bagel seasoning
  • 1-2 tablespoons olive oil
  • Optional Fillings:
  • avocado
  • bacon
  • scrambled eggs


  • Chipotle Butter:
  • In a small bowl, thoroughly blend the butter with the minced chipotles and adobo sauce and season with salt and pepper. Set aside until ready to use.
  • Grilled Cheese:
  • Spread the chipotle butter over the top side of each slice of bread. Brush both sides of each slice of bread with butter.
  • Stack cheese slices and optional fillings (if desired) on one piece of bread and cover with the remaining slice. Sprinkle bagel seasoning on each outside side of the bread and gently press the sandwich together.
  • Heat oil in a nonstick skillet, cast iron, or griddle over medium heat. Place sandwich on pan and weigh down with a heavy skillet or plate. Cook until bread is golden brown, about 4 minutes, turn sandwich and grill the other side, an additional 3-4 minutes. Slice in half and eat immediately. Enjoy!
