Greek Style Turkey Burgers

Greek Style Turkey Burgers

Servings 4 Servings

Ingredients
  

  • 1 pound ground turkey
  • 1 cup fresh spinach leaves, chopped
  • 6-8 whole sun-dried tomatoes (in oil), chopped
  • ¼ cup chopped red onion
  • 2 cloves garlic, pressed or minced
  • 2 tablespoons fresh chopped dill
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 4 hamburger buns
  • Toppings:
  • lettuce leaves, sliced red onion, tomatoes…
  • Tzatziki Sauce:
  • 1 seedless cucumber, with skin
  • ¾ cup full-fat plain Greek yogurt
  • ¼ cup crumbled feta cheese, (optional)
  • 2 cloves garlic, pressed or minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh minced dill
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion, garlic, dill, mayo, Dijon, salt and black pepper. Gently mix with your hands to combine.
  • Divide the burger mixture into 4 patties. Cover and refrigerated for 30 minutes, or overnight.
  • Preheat oven to 400ºF.
  • Place the turkey burgers on ta sheet pan and drizzle with olive oil. Transfer to the oven and cook for 20-25 minutes
  • Slather buns with tzatziki sauce and garnish with toppings of choice. Enjoy!
  • Tzatziki Sauce:
  • Grate the cucumber and place in a strainer. Set aside for 30 minutes.
  • In a bowl, combine the drained cucumber, yogurt, garlic, lemon juice, fresh dill, kosher salt and ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
